In Puglia families eat together every day. It is also the home of simple great cooking. Everything is fresh, in-season and prepared to accentuate the intrinsic taste. If you want to taste a great pasta, just follow two simple rules: cook your pasta in abundant boiling water – according to package directions (do not forget to taste it once in a while); drain it when is still a bit raw (we say "al dente"). Then, dress it with tomato sauce flavoured with basil and add some cheese on top. Keep it just as simple as that and enjoy the typical Italian first main course called “pasta al sugo” (we are used to at least three main courses).
